1 Batavia Lettuce

  • 2 tbsp vegetable oil
  • 3 large eschallots, thinly sliced
  • 1 long green chilli, seeded, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 1 stalk lemongrass, white part only, finely chopped
  • 500g minced pork or chicken
  • 2 tbsp hoisin sauce
  • 1 large lime, juiced
  • 2 tbsp fish sauce
  • 1 tbsp grated palm sugar or brown sugar
  • 1 lebanese cucumber, halved, seeds removed, thinly sliced
  • ¼ cup roasted peanuts, roughly chopped
  • ¼ cup each coriander leaves, mint leaves
